If you can master the technique of serving a flaming or a floating cocktail, your parties will be the ones people look forward to the most. It is easy to accomplish once you know how. The pousse café, or the floating drink is done in layers. The trick to this drink recipe is to add the heavier liqueurs first and the lighter ones on top so the ingredients don’t get mixed together. Invert a spoon and pour the liquid over the top and back of the spoon and this will spread the liqueur out as it goes into the glass. For flaming cocktails, your drink recipe needs to have liqueurs with high alcohol content such as brandy. The glass needs to be prewarmed and put a little bit of the liqueur into it. Over the stove, heat a smaller amount of your liqueur and then light with a match. Pour this mix into the glass carefully and the rest of the liqueur will light on fire. This drink recipe comes with a safety tip, keep some baking soda on hand **just in case**.
